After my son's birthday party on Saturday we finally got around to doing some Valentine's Day baking. I love sugar cookies and have a lot of fun baking with my daughter. I know she enjoys it too since her exact words were "This is the best day ever!" It reminds me of many afternoons spent baking with my mom and sisters when I was a little girl. I don't know if I ever said the same thing but I do know that's where I got my love of baking. The recipe I use is from Martha Stewart's Baking Handbook. It's really easy to make and holds it's shape well which makes it perfect for cookie cutters.
Makes about 3 dozen, bake at 350 degrees for about 15 minutes.
- 2 cups unsalted butter, at room temperature
- 3 cups sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons salt
- 5 cups all purpose flour, plus more for dusting
- Royal icing
Cream butter and sugar together on med-high speed until light and fluffy, about 5 minutes. Add eggs, vanilla and salt, mixing until combined. Add flour in two batches mixing until just incorporated.
Divide dough in half, cover with plastic wrap and refrigerate for 2 hours.
Roll dough about 1/4 inch thick onto a lightly floured surface and cut with desired shapes. Place on baking sheets lined with parchment paper 1-2 inches apart and bake at 350 degrees for about 15 minutes.
After the sugar cookies we made some pink popcorn for my kids to share at school. This is a great last minute nut-free snack to send since it took very little time and ingredients. Just follow these simple steps to make this delicious pink sprinkle popcorn. And you might want to make a little extra for yourself too!!
Step 1: Make popcorn
Step 2: Melt chocolate (I used pink Wilton candy melts) by placing in a microwave safe dish and heating 1 minute at a time on 50% power. Stir after each minute until it reaches a runny consistency. Overheating will cause the chocolate to harden so be careful!
Step 3: Drizzle melted chocolate over the popcorn and add any Valentine themed pink and red sprinkles and/or sugar. I also like to add in a little salt for that sweet and salty taste!
Step 4: Place in a sealed container or bag to keep it fresh and send to school the next day.
