Valentine's Day Sugar CookiesAfter my son's birthday party on Saturday we finally got around to doing some Valentine's Day baking. I love sugar cookies and have a lot of fun baking with my daughter. I know she enjoys it too since her exact words were "This is the best day ever!" It reminds me of many afternoons spent baking with my mom and sisters when I was a little girl. I don't know if I ever said the same thing but I do know that's where I got my love of baking. The recipe I use is from Martha Stewart's Baking Handbook. It's really easy to make and holds it's shape well which makes it perfect for cookie cutters.

SUGAR COOKIES

Makes about 3 dozen, bake at 350 degrees for about 15 minutes.

  • 2 cups unsalted butter, at room temperature
  • 3 cups sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons salt
  • 5 cups all purpose flour, plus more for dusting
  • Royal icing

Cream butter and sugar together on med-high speed until light and fluffy, about 5 minutes. Add eggs, vanilla and salt, mixing until combined. Add flour in two batches mixing until just incorporated.

Divide dough in half, cover with plastic wrap and refrigerate for 2 hours.

Roll dough about 1/4 inch thick onto a lightly floured surface and cut with desired shapes. Place on baking sheets lined with parchment paper 1-2 inches apart and bake at 350 degrees for about 15 minutes.

Valentine's Day Pink PopcornAfter the sugar cookies we made some pink popcorn for my kids to share at school. This is a great last minute nut-free snack to send since it took very little time and ingredients. Just follow these simple steps to make this delicious pink sprinkle popcorn. And you might want to make a little extra for yourself too!!

Step 1: Make popcorn

Step 2: Melt chocolate (I used pink Wilton candy melts) by placing in a microwave safe dish and heating 1 minute at a time on 50% power. Stir after each minute until it reaches a runny consistency. Overheating will cause the chocolate to harden so be careful!

Step 3: Drizzle melted chocolate over the popcorn and add any Valentine themed pink and red sprinkles and/or sugar. I also like to add in a little salt for that sweet and salty taste!

Step 4: Place in a sealed container or bag to keep it fresh and send to school the next day.
